Almond flour is carbohydrate-free, high in healthy fats and protein, and makes a perfect substitute for ordinary flour, particularly in cake making!

This recipe is free from dairy, soya, and wheat and contains no refined sugars.

 

You Need:

4 ripe bananas

3 eggs

3 tbsp maple syrup (optional)

1/2 tsp almond extract

1tsp baking soda

1tsp baking powder

2 tbsp non-dairy milk

200g almond flour

Method:

  1. Preheat the oven to 180C. Grease a loaf tin with coconut oil.
  2. Line tin with parchment paper.
  3. Place bananas, eggs, syrup, almond extract, baking soda, baking powder into a blender and puree until very smooth.
  4. Add almond flour and the non-dairy milk and combine the mixture.
  5. Pour the cake batter into the tin.
  6. Bake at 180C for 35-40 minutes, or until golden on top.
